KEOTA – A new bakery called Prairie Flower Bakery is set to open in Keota. The bakery, which will be located at 214 East Broadway, is owned by Jenny Schneider, who has lived in Keota for 20 years and currently works full time doing maintenance on hog barns.

“I turned fifty this year. So this is kind of like my retirement plan,” said Schneider. “Because with my full time job I’m outside in all kinds of weather. So I’m like, well, I always liked to bake. This is a change of pace.”

Schneider, who has never worked in a bakery before, is nervous but excited about the new bakery. She intends to serve donuts, muffins, scones, pie, cupcakes, cheesecake, and bulk candy. Currently, she is hard at work getting the new bakery ready, redoing the drywall, floors, and ceiling, installing exhaust fans, shelves, and cooking equipment, and installing new doors and windows. She hopes to have the bakery open sometime in July.

“Keota’s been really good to me,” said Schneider. “Whenever I’ve been here, working, I’ve had nothing but positive compliments and it makes me feel good, being part of a community that’s so supportive.”
